Anyone who’s enjoyed food from a live BBQ pit will know the feeling of the smell hitting your senses. It’s almost primal. It’s incomparable.

While we’re big fans of takeout and its convenience, we wanted to take a deeper look at the actual difference between BBQ dine-in vs takeout.

So, we found some geeky facts and asked our team to describe what they love about dine-in BBQ in Houston:

BBQ Dine-in vs Takeout: The Science Behind a Fresh BBQ

The Flavor

Let’s get science-y for a minute. The best barbeque meat comes from slow-smoking techniques, as it infuses the meat with a distinct flavor.

That flavor is mainly due to two chemicals called guaiacol (an aroma) and syringol (the flavor). Sadly, these chemicals evaporate very easily due to their high vapor pressures. As a result, the meat loses its desirable flavor compounds over time. So, unless you’re freeze-sealing it or eating it fresh from the BBQ pit, it’s going to lose flavor pretty quickly.

That’s precisely why we take our meats straight from the pit to the plate at Goode Co. Barbeque!

Interestingly, though, most of what we perceive as flavor is actually from smell. When you’re sitting around that divine cooking, your saliva ducts get to work, readying the chemicals that activate your taste buds. So, when the food hits the tongue, it’s extra sensitive and extra tasty.

The Tenderness

We’re glad to say that our takeouts retain their tender, succulent nature. But if you plan to let it cool and reheat later in the day, you’ll notice the meat lose its moisture. It might even have a tougher, rougher texture than it would straight off the grill. You’ll also lose that juiciness.

With our pit-smoked brisket, there’s also a richness to the outer ‘bark’ layer that is just better on the senses when fresh. Those slight temperature changes between the interior and exterior, and the sensation of fresh smoke on the tongue, are unbeatable.

The Experience of Dining In

Alright, enough science. You can’t deny a feeling.

You just can’t beat warm bread and cold drinks being served immediately. Whether it’s iced tea or a cold beer, it’s what you deserve.

And there are no thoughts about clearing up, and “is it hot enough?”. It’s there. Ready to demolish.

We love a convenient take-out too. But if we had to choose between that and a friendly Texan smile waiting on foot for us? We’ll take the king’s treatment every time.

And at a place like our Goode Co. Barbeque restaurant, it’s about more than just the food. It’s a celebration of Texan culture, with rustic decor, a relaxed atmosphere, and a chance to escape the rest of your day.

Heck, we even have live music on many nights and love showing our guests our grills.

Our Authentic Texan BBQ Techniques

So, at Goode Co. Barbeque, we have grilling techniques that have been trusted and fine-tuned since we first fired up in 1977.

Our founder, Jim Goode, taught us what we need to know best: smoking the meat low and slow. Jim and his grilling partner would even take turns, going to sleep to wake up in the wee hours and ensure the grills were still smoking.

Today, we stay true to these methods, smoking our meats for up to 16 hours! We do it over mesquite wood, which is the authentic Texan BBQ method.

No Delay

When you come to eat at Goode Co. Barbeque, you’ll smell and can see us smoking the meat on site. Constantly. You can even see us carve your meat straight onto your plate. The aromas will be prepping your taste buds. This is meat heaven.

Our sides are all housemade too, usually on the day. So, whether you’re going for Mac and Cheese, Potato Salad, Refried Beans, or Southern Green Beans, you’ll get that fresh restaurant-style hit.

It’s wise to show up at any BBQ pit when the joint opens to make sure you’re getting the freshest barbeque meat of the day.
